INGREDIENTS:
- Middle Eastern flatbread (or pita bread)
- Frozen grilled chicken strips (or precooked rotisserie chicken)
- Crumbled feta cheese (my favorite feta has Mediterranean herbs)
- Tzatziki (Greek yogurt cucumber dip)
- Hummus dip (my favorite variety is tomato and basil)
- Chopped lettuce
- Diced tomatoes
DIRECTIONS:
Warm the flatbread on the griddle (like a tortilla).
Warm the precooked chicken in the microwave.
Assemble a “taco bar” with all of the ingredients.
Create Greek tacos in the same manner as Mexican tacos.
Fold the warm flat bread in half in the middle to create a soft taco shell.
Fill with warm chicken, crumbled feta cheese, chopped lettuce & diced tomatoes.
Garnish with creamy tzatziki and hummus.
NOTES:
Warm flatbread can be kept hot inside a tortilla warmer.
Serve the tacos with a side of fruit to create a complete meal.
