S’mores Brownies

INGREDIENTS:

  • Brownie Mix (Ghirardelli Triple Chocolate Brownie Mix is my favorite) – double batch
  • Eggs
  • Oil
  • Water
  • 2 Cups Miniature Marshmallows
  • 2 Cups Semi-Sweet Chocolate Chips
  • 1 Cup Graham Crackers – broken into small pieces

DIRECTIONS:

Preheat the oven and prepare a 9” x 13” rectangular baking pan by lightly greasing or spraying with a non-stick cooking spray. 

Prepare a double batch of the brownie mix according to the directions on the box and pour the batter into the prepared baking pan. Bake according to the directions on the box.

While the brownies are baking, break the graham crackers into pieces and place them in a bowl. Add the semi-sweet chocolate chips and mini marshmallows and stir together. When the brownies are almost done, spread the topping mixture evenly on top of the brownies. Make sure a lot of marshmallows are exposed for toasting; add more marshmallows, if needed.  

Switch the cook mode from bake to broil and put the brownie pan back in the oven. Turn on the oven light and watch carefully because the marshmallows puff and brown VERY quickly. Remove the pan from the oven after the marshmallows have toasted. Cool before cutting.

NOTE:

I line the bottom of the baking pan with parchment paper, leaving a tail on each end to facilitate removal. The entire batch of brownies can be lifted out of the pan at once and placed on a cutting board, so the brownies can be cut into pieces without scratching the pan. Loosen the edges on the sides with a knife and then gently lift the ends of the parchment paper to remove the tray of brownies and transfer them to the cutting board.

Feel free to adjust the ratio of the toppings to suit your taste. I am a chocoholic and like lots of dark chocolate chips in the topping. However, if it seems like chocolate overload, reduce the quantity. You can also switch to milk chocolate chips, if you prefer.

Immerse the cutting knife in hot water and dry any moisture before slicing the brownies with the warm knife. Wipe the blade between each slice to make cleaner cuts.
